It's that time again! The opening of downtown's Milledgeville Market place. Located next to the Golden Pantry on Hancock Street. Open every Tuesday 4:00pm-7:00pm.

The Market Place is your place to purchase locally grown produce and handmade items. Don't forget the Vidalia onions, bell peppers, fresh herbs and fresh tomatoes are in. These will be great in the recipe bellow.

Remember when you shop locally you help keep our economy thriving and save a job.  To do this we need every citizen to shop and buy locally,  Let's keep downtown alive!

You may think you are to busy to cook a homemade meal, but I'm here to tell you, you can with the help of your local Market Place. Homemade spaghetti is a quick nutritional homemade comfort food that can be made in less than 30 minutes. Start by selecting locally grown tomatoes, Vidal onions, bell pepper, mushrooms and fresh herbs. I like to use tarragon, thyme, oregano, and basil. These can also be grown easily at home in our rich Milledgeville soil.

Homemade Spaghetti:

If substituting with cans, do not drain.

1 lb of hamburger or sausage

1 box of spaghetti noodles  your choice any kind will do

4-6 medium tomatoes ( 2 cans 14,5 oz. of fire roasted tomatoes can be used instead)

1 Vidalia onion

1 bell pepper

1 pkg of fresh mushrooms ( 1 can 4 oz. of Polar Shiitake mushrooms can be substituted)

1-4 cloves of garlic( 1/4 - 1 tsp.of garlic salt or powder can be substituted)

1/4 tsp each of your favorite herbs or Italian herbs

salt to taste

Desired amount of water

if using  tart tomatoes a pinch of sugar can be added

cook hamburger til done and drain well

puree tomatoes in a blender then add to your pan

Chop or dice  onion, bell pepper, mushrooms, garlic and herbs add to pan

salt to taste

add enough water to make sauce to your favorite consistency I add less, because I like a thicker sauce, you may like yours thinner.

once everything is added bring to a boil for about three minutes and then turn down to simmer. Simmer as long or as little as you like. It will depend on your schedule. The longer it simmers the more time everything has to blend.

Cook spaghetti noodles and drain

Serve sauce over noodles with your favorite pull bread or garlic bread and enjoy a simple home cooked meal with your family.
